The grapes are only harvested at maximum ripeness, when they reach the optimum flavor profile. Quality wine can only be produced from flawless grapes. Therefore, the interaction between the cellar and outside work is extremely important. The harvesting is carried out for several weeks starting in mid-October. Each vineyard is selected several times until it is completely harvested.
We attach great importance to the careful development of our wines. Even the grapes are gently pressed to avoid tanning and sediment particles. The fermentation takes place in refrigerated stainless steel containers and wooden barrels over a period of 4-8 weeks. After fermentation the wine remains for some time to mature on the lees.
